Food is biggest stumbling block on zero-waste nature tour

There is reason for optimism as the town diversifies its local economy, betting on "a mix of small manufacturing businesses, health care and specialty services, and hospitality for travelers" to endure the sudden decline in mining revenue. Its calculated revitalization may hold lessons for other towns.

After realizing the rate that which food gets thrown away at grocery stores due to approaching expiration dates, one man in Nigeria decided to do something about it. Oscar Ekponimo created a web-based app that lets grocery store retailers know if something is near expiration. Once notified, the retailers mark down the item; this allows non-governmental organizations to purchase and sell to people that are food insecure.

Bruce Friedrich, the Executive Director of The Good Food Institute in Washington, DC, thinks that we're wasting resources raising animals for food products. He thinks the answer is creating a product that doesn't replace meat, but rather competes with it.

The process will engage ethically-minded consumers, support local farmers, make use of food waste, help the planet, and provide high-quality food to those who are food insecure. It’s a solution that benefits everyone involved.

Bozeman, Montana, a city grappling with how to plan for growth in a smart and strategic way, is looking to learn from Fort Collins, Colorado. The two cities are similar in terms of the features that make them appealing: once low-cost, small college towns with beautiful scenery and lots of space. Now, Fort Collins’ population has soared, and critics say development could have been smarter. Bozeman is learning lessons about planning and inclusivity, hoping not to make the same mistakes.

Redeveloping and repurposing unused real estate provides a path toward economic revitalization. With a combination of public and private grants, the nonprofit group, International Sonoran Desert Alliance (ISDA), has purchased and redeveloped real estate in the town of Ajo, Arizona. The renovated town plaza and Curley School complex contain retail spaces, artist studios, and even house community gardens of the Ajo Center for Sustainable Agriculture.

In Indonesia, transferring land management rights to local residents is slow-going, but one community is setting an example for what can happen when the residents are in charge. Cultivate is in its second year of existence, has three staff and 400 volunteers, and hopes to expand beyond their pilot program to reach all 21 schools in the district.

Solar-powered cold storage units help farmers in India to store their harvests during extreme heat instead of discarding their produce or trying to sell it quickly for cheap to avoid waste. The solar-powered option is significantly cheaper than typical electric cold storage, making it more accessible to small-scale farmers.

The nonprofit Coombs Outdoors runs summer and winter camps for youth to experience and learn about the outdoors. The camps are in high demand because of the affordable price made possible by donor subsidies.
